How the sockeye salmon is caught and prepared:
Gillnets are a traditional and sustainable way to catch wild salmon. The mesh size is carefully chosen to catch only the right species, helping reduce bycatch and protect female fish. Once the net is hauled in, each salmon is picked by hand, one at a time, to ensure quality and care. Once caught, every fish is filleted and pin-boned by hand, vacuum-sealed for freshness, and flash-frozen right away to lock in flavor and texture.
How to thaw your salmon:
For the best results, remove the vacuum seal and thaw your salmon in the fridge (at or below 38°F) for 10–12 hours, or until fully defrosted. Be sure to cook it within 1–2 days of thawing.
